The Food & Beverage (F&B) Manager is responsible for the effective management and running of the restaurant and bar operations including menu design and pricing, event planning support, scheduling, food ordering, preparation and production, inventory, cash control, compliance with alcohol policies, cleaning, safety, guest service, team member training and supervision, troubleshooting, closing duties and any other tasks assigned by the Marketing Director and/or Chief Executive Officer.  He/she is also responsible for the execution of policies and procedures within the department by performing the following duties personally or through subordinates.

Duties & Responsibilities: 

  • Maintains a positive attitude at all times, supporting the policies of Senior Management of Blackbird Bend Casino;
  • Adheres to established department and casino policies and procedures regarding guest service standards;
  • Maintains the strictest confidence of any and all confidential information within the F&B Department;
  • Organizes, schedules and coordinates the activities of the F&B team;
  • Administers department policies; evaluates performance relative to Blackbird Bend Casino standards;
  • Monitors compliance with all aspects of Blackbird Bend Casino internal controls;
  • Increases department's effectiveness by recruiting, selecting, orienting, training, coaching, counseling, disciplining, and termination of team members as needed;
  • Issues timely performance evaluations on subordinates and offers developmental guidelines and resources to achieve goals and objectives;
  • Evaluates operating procedures, recommends changes, and implements approved changes;
  • Manages assigned operational functions within the department consistent with the strategic plan and vision for the department;
  • Manages and monitors fiscal budget, operations of assigned department and marketing strategies to produce both short term and long term profitability for the property;
  • Manages the delivery and measurement of guest service within the department consistent with the casino’s core service standards;
  • Provides input into the research, development, evaluation and implementation of new products, services, technology and processes to ensure the casino’s competitive position and in anticipation of changing guest needs within the dynamic hospitality and gaming environment;
  • Performs duties of subordinates as needed in the supervisor capacity;
  • Ensures team members awareness of Internal Controls;
  • Greets guests and maintains a friendly and inviting atmosphere;
  • Prepares and holds regular staff meetings;
  • Prepares monthly departmental reports;
  • Ensures food and other supplies are readily available;
  • Contributes to a team effort and accomplishes related results as required;
  • Maintains positive working relationships with all F&B vendors;
  • Performs other duties as required.

Minimum Qualifications:

  • Must be a minimum of 18 years of age or older upon employment;
  • High School Diploma or equivalent required;
  • Bachelor’s degree, plus three years of experience in the administration and management of F&B operations strongly preferred; or equivalent combination of experience and education;
  • Two years management experience required; or equivalent combination of experience and education;
  • Direct culinary experience including menu development, catering, and kitchen operations strongly preferred;
  • Must be able to successfully pass a pre-employment drug/alcohol screening and background investigation;
  • Must be able to obtain and maintain a Gaming License.
